Welcome to my channeI ! My name is Elsie Yan and I live in Kuala Lumpur, Malaysia.
I started living low carb since Sept 2017 and it has helped me lose some weight, normalized my blood sugar from a pre-diabetic level, got rid of my horrible acid reflux problem and improved my overall immune system tremendously. ALMOND FLOUR VERSION
[Total Servings = 16]
NUTRITION INFO PER SERVING
Total Carb = 5.0 g
Dietary Fiber = 1.1 g
Net Carb = 3.9 g
Calories = 147
Total Fat = 12.2 g
Protein = 4.4 g
COCONUT FLOUR VERSION
[Total Servings = 16]
NUTRITION INFO PER SERVING
Total Carb = 4.4 g
Dietary Fiber = 0.8 g
Net Carb = 3.6 g
Calories = 128
Total Fat = 10.7 g
Protein = 3.8 g
DRY INGREDIENTS
Almond flour = 80 g (2/3 cup) (OR Coconut flour = 20 g / 2 1/2 tbsp)
Matcha powder = 12 g (2 tbsp)
Monk fruit = 50 to 80 g (depending on whether your white chocolate is sweetened with stevia)
Salt = 1/2 tsp
WET INGREDIENTS
Unsalted butter = 113 g (1/2 cup)
Whole eggs (Room Temperature) = 3 large (175 g)
Vanilla Extract = 1 tsp
Sugar free white chocolate or cacao butter = 125 g (1 cup)
Note:
Matcha is a vivid green powder that is nutrient-rich and made from pulverized green tea leaves. There are two primary grades of matcha i.e. ceremonial and culinary. Ceremonial is the highest quality of matcha and while it can be more expensive, it tastes better, has a less bitter taste, and gives a more vibrant color. While the cheaper culinary grade is fine for baking, it tends to turn greenish brown and taste slightly more bitter. However, if this is not a problem for you, feel free to use culinary grade. In the video, I used ceremonial grade and as you can see, the color is more vibrant and tastes great.
DIRECTIONS
1. Preheat the oven at 340 F or 170 C.
2. Melt the butter and white chocolate in the microwave or stove top. Let it cool for a bit then transfer into a big bowl.
3. Add the eggs and whisk until smooth. Then add the sweetener, salt, vanilla extract and whisk until well combined.
4. Sieve the flour and matcha powder into the wet mixture. Mix with a spatula until well combined.
5. Transfer the batter into an 8x8 inch baking pan lined with parchment paper.
6. Top with chopped roasted pecans (optional).
7. Bake for about 15 to 20 minutes. It is done when the surface feels soft and spongy. Do not overbake as the texture will become dry and cakey.
8. Cool for a bit before slicing into 9 or 16 servings. In the video, I sliced into 16 servings.
9. These matcha brownies can be kept at room temperature for a few days provided you have a cool and dry climate. Otherwise, it's best to refrigerate earlier for up to a week or freeze for up to a few months.

Is it possible to add butter to the recipe and still getting rise?
Yes but not much
Looks gorgeous! One thing - a farmer told me never zest a non-organic lemon, as non-organic citrus is sprayed with a chemical fungicide called imazalil, which is carcinogenic.

If I use almond flour instead how much should it be

May i know what flax egg can be substituted with?
You can just use 1 whole egg

It can be kept at room temperature for a few days provided you have a cool and dry climate. Otherwise it is best to refrigerate earlier for up to a week or freeze for up to 3 months

Just made this for breakfast and it’s soo delicious! Can’t believe it’s only 0.6g carbs! It doesn’t feel like it. I replaced the almond milk with 2tbs water because I didn’t have milk but it works perfect! Thank you I love your recipes so much ❤

😂😂😂😂🤔 it funny you say use unsalted butter. But then put in salt. Just use salted butter folks. I do.
The reason why we use unsalted butter is so that we can control the amount of salt we use for the recipe

May I ask 2 question to help me? Thank you. Recipe calls for 3 tblsp psyllium for you to grind to half volume. Can you use 2 teaspoons of pre ground like in your buns? And also, if one doesn’t have 8 eggs, can you use 8 liquid egg whites and still turn out good? Thank you!
Yes, you can use 2 tsp of preground psyllium powder. You can also use liquid egg whites from cartons.

Do you need the helium husk as I don't have that.
Yes, it is the most important ingredient as it acts as the gluten. Without it, the bread will be crumbly with cake-like texture.

I only have psyllium husk powder I buy at Walmart and Im only able to shop at Walmart only and I don't buy online because buying online is stressful to me, can I use the psyllium husk powder powder and use 1 1/2 tbsp to make the pizza crust work? I remember you mentioned in another video about reducing the amount of psyllium husk powder since it's condensed from being broken down finer.
Yes, for preground psyllium powder, only a small amount is required. You can try 2 to 3 tsp, and if necessary, add gradually just until you can shape the dough.

I did 2 1/2 tsp of the psyllium husk powder and I baked it a few minutes longer, the only thing is I wasn't able to transfer the spread out dough to the pan with my hands because I could see it was going to break apart so I flipped it off of the parchment paper and I reversed the crust edges to face upwards, but the pizza held itself together after baking, I live in the US, so ovens vary, but it exceeded my expectations do to the psyllium husk powder and being my first time. ❤

You use a lot of egg whites in your bread recipes. Since I don't have any purpose for the yolks and I don't like to waste, I want to use the whole egg instead. In my neighborhood supermarket, the eggs are all medium-sized. In this recipe, you convert 8 large egg whites into 4 large whole eggs. How many medium eggs do I need for this recipe?

@Metalredhead As all eggs are different everywhere, it is best to weigh them. That's why I provide the weight as well. 4 x 58 g = 230 g so just measure your eggs for 230 g

You gotta temper the chocolate otherwise the final chocolate will be soft like brownies not hard. Didn’t know that until I followed her recipe and came out soft….

How is the taste and texture of the coconut flour vs almond flour? And which one would would say is better and closer to the taste and texture of wheat flour pizza dough? My mom likes crispy crust on her pizza and for myself I like either crispy or soft texture.

I've made the almond flour recipe, if you make the coconut version is it way drier, I've made a few coconut recipes and it's like swallowing dust lolol
Coconut flour is very absorbent hence, need more moisture. In most of my cake recipes, I provide ratios for almond, coconut, and combo of almond & coconut flour, respectively. I find that coconut flour version is softer and moister, and it is quite popular among my viewers.

I made this cake as well as so many I've made from this channel. Elsie is just the BEST! I'm always repeating myself but that's the truth! So I preferred the vanilla version of this one for my surprise but it's really good, texture and flavors so we'll balanced! Don't skip the frosting because it makes a huge difference! This recipe is GOLD! I made it with apple extract and it came out so DELICIOUS! I didn't have pecans so I used walnuts. This cake is so versatile. I'm going to make it with orange peel and other extracts like banana or cookies and cream. This is superb! Love it's texture! Thank you Elsie! Fake video! No way thats not with flour! I bake keto cakes and no way your cake is that flexible and bendable !!!! Coconut and almond doesn't have gluten that holds it together like that. Not even 6 eggs do that!!!
